The anytime vegetable stir-fry

INGREDIENTS

8 oz of udon noodles or 1 c. rice

1 ½ tsp oil

2 carrots, sliced into discs

2 c. kale, chopped

1 small onion, chopped

1/3 c. frozen peas

1 onion, sliced

1/2 inch ginger, minced

1/4 tsp red pepper flakes

3 cloves of garlic

3 tbsp soy sauce

2 tbsp rice vinegar

2 tbsp water

3 tsp orange juice

2 scallions, sliced (optional)

sesame seeds (optional)

2 eggs (optional)

Salt and pepper

 

DIRECTIONS

  1. Heat pot of water for rice or noodles, and cook according to package.
  2. Heat oil in skillet and add red pepper flakes. Add in onion and red pepper and saute for 2 minutes. Add carrots and saute for another 5 minutes. Add garlic and ginger and saute for 1 minute. Add in kale and peas and continue mixing.
  3. Add rice vinegar, soy sauce, orange juice, and water. Add in salt and pepper to taste. Remove from heat.
  4. In a separate pan, scramble 2 eggs. Add to the larger skillet.
  5. Once rice or noodles have cooked, add to the larger skillet.
  6. Add rice vinegar, soy sauce, orange juice, and water to the larger skillet. Add salt and pepper to taste. Remove from heat.
  7. Add scallions and sesame seeds as garnish.
